Corn Tortillas



Corn tortillas are the Ringo of the taco world. They're not showy, but if they're not in the mix the meal just doesn't seem quite right (they also do a pretty mean rendition of "Octopus's Garden"). So to get the right base for your tacos, you're going to need to either buy or make some corn tortillas.

If you buy them pre-made, make sure to throw them on a non-stick skillet for about a minute per side to warm them. But to tell you the truth, I'm not a huge fan of this option. Making corn tortillas is so simple and much more delicious.






Corn Tortilla Recipe

Serves: 15 tortillas               Prep time: 5 min                Cook time: 20 min

2 cups of Corn Masa Flour (Found in the Mexican section of most supermarkets)
1 1/2 cups of lukewarm water
1 teaspoon of kosher salt

Wax paper
Tortilla press or a heavy book and some brute strength

Mix It
Place a non-stick skillet on the stove at medium-high heat. Measure the Masa and salt into a bowl and add the water slowly, mixing with your hands to create a dough. You may need more or less water - don't let the dough get slimy and don't leave dry flour in the bowl.

Press It
Tear two sheets of wax paper to the width of the tortilla press plates. You'll be pressing the dough between these sheets to create tortillas. Make a dough ball about the size of a golf ball in your hands.


Place the ball in the tortilla press (just a little off centre, closer to the hinge side) and get pressing! Don't throw all your weight into it or press down for more than a couple seconds - it will make the sides too thin to lift off the wax paper.

Grill It
Peel the wax paper off both sides of the tortilla and throw it on the grill. Cook multiple tortillas at once if they will fit in the skillet. Each side should take 45 seconds to a minute to get some nice golden brown spots - when the corners start to curl up it's time to flip. You can play around with your stove's heat settings if the tortillas start to get charred too quickly.

And there you have it! A few easy steps to warm, fresh corn tortillas. Serve them with any filling you heart desires.
